- 1 medjool date (24g), softened & blended into syrup
- 4-6 Tbsp hot water (depending on how thick you want the oats)
- ⅓ cup rolled oats (25g)
- 1 tsp chia seeds (4g)
- 1 tsp ground flax seeds (3g)
- ½ cup Greek yogurt or kefir (113g)

- 1 tsp lemon juice

Method:
The night before:
- Soak the medjool date in hot water for 5-10 minutes, then blend into a syrup.
- In a jar or container, combine oats, chia, flax, yogurt, protein powder, and date syrup. Stir well, cover, and refrigerate overnight.
The next morning:
- For the compote: In a small pot, simmer blueberries, lemon juice, and 1 tsp chia seeds until thickened.
- Place the overnight oats in a bowl and top it with blueberry compote, drizzle with almond butter, and sprinkle with walnuts.
