Ingredients (1 serving):

  • 1 medjool date (24g), softened & blended into syrup
  • 4-6 Tbsp hot water (depending on how thick you want the oats)
  • ⅓ cup rolled oats (25g)
  • 1 tsp chia seeds (4g)
  • 1 tsp ground flax seeds (3g)
  • ½ cup Greek yogurt or kefir (113g)

  • ⅓ cup blueberries (50g)
  • 1 tsp lemon juice
  • 1 tsp chia seeds (for compote)
  • 1 tsp almond butter (5g) - drizzle

Method:

The night before:

  1. Soak the medjool date in hot water for 5-10 minutes, then blend into a syrup.
  2. In a jar or container, combine oats, chia, flax, yogurt, protein powder, and date syrup. Stir well, cover, and refrigerate overnight.


The next morning:

  1. For the compote: In a small pot, simmer blueberries, lemon juice, and 1 tsp chia seeds until thickened.
  2. Place the overnight oats in a bowl and top it with blueberry compote, drizzle with almond butter, and sprinkle with walnuts.
