High-Protein Collagen Chocolate Banana Loaf

A moist, chocolatey banana bread that delivers comfort and function in equal measure - designed to support skin, joints, and recovery in an everyday bake.

Ingredients

For the Batter

  • 3 ripe bananas, very spotty
  • 2 eggs
  • ½ cup greek yoghurt
  • 1 tablespoon milk of your choice
  • 1 teaspoon vanilla extract
  • 1 cup self raising flour
  • ¼ cup PrimeSelf Hydrolysed Collagen
  • 2 scoops PrimeSelf Grass-fed Whey Protein (Chocolate)
  • 1 teaspoon cinnamon
  • ⅓ cup chopped pecans or walnuts (optional)
  • 1 tb cocoa - to make it extra chocolatey (optional but recommended)

Optional substitutions:

  • Use flax eggs for a plant-based option
  • Substitute Greek yoghurt with dairy-free yoghurt if needed
  • Kops of protein powder instead of having collagen as well

Gluten-free Option:

  • Swop self raising flour for almond flour
  • Add in 1 teaspoon baking powder
  • Add ½ teaspoon of baking soda
  • Remove 1 tablespoon milk of your choice



Method

  1. Prepare: Preheat the oven to 175°C (350°F) and line a loaf tin with parchment paper or lightly grease.
  2. Mash: Add bananas to a large bowl and mash until mostly smooth.
  3. Combine wet ingredients: Add eggs, Greek yoghurt, vanilla and milk to the bananas and whisk until fully combined.
  4. Mix dry ingredients: In a separate bowl, whisk together self raising flour, collagen, whey protein, and cinnamon.
  5. Fold: Add the dry ingredients to the wet mixture and gently fold until just combined.
  6. Add texture: Stir in chopped pecans or walnuts if using.
  7. Bake: Pour the batter into the prepared loaf tin, smooth the top, and bake for 40 minutes, or until a toothpick comes out clean.
  8. Cool: Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
