Super Green Black Bean Brownies

Ingredients

  • 1 × 400g tin black beans, rinsed and drained
  • 3 large eggs
  • 3 Tbsp coconut oil (or neutral oil), melted (45 ml)
  • 1 tsp vanilla extract (5 ml)
  • ½ cup unsweetened cacao or cocoa powder (30 g)
  • ⅓ cup honey, can add more for sweetness
  • ½ cup almond flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup dark chocolate chips (60 g)
  • 1 cup nuts, chopped
  • 4 scoops PrimeSelf Organic Super Greens

Optional but recommended

  • 1 tsp instant coffee (for deeper chocolate flavour)

 


 

Method

  1. Preheat & Line: Preheat oven to 180°C (350°F). Line a 20×20 or 23×23 cm baking pan with parchment paper.
  2. Blend wets: Puree black beans in a food processor until mostly smooth, then mix with eggs, oil, honey and vanilla until combined.
  3. Combine dries: In a separate bowl, whisk cocoa powder, almond flour, baking powder, salt, Organic Super Greens and coffee (if using), then fold into the wet mixture until just combined.
  4. Fold & pour: Stir in chocolate chips and nuts, then pour batter into a lined baking pan.
  5. Bake & rest: Bake for 20-30 minutes until edges are set and the centre has a slight wobble. Cool completely before slicing for best texture.
  6. Store: Once cooled, store in an airtight container in the fridge for up to 7 days. Or freeze for up to 3 months. When ready to eat, let them thaw in the fridge before reheating them for best results (I like to pop them in the air fryer for a few minutes to give them a nice texture!)

Tip: Ensure the centre has a slight wobble when you take them out because you don’t want to overcook them. 

Storage: Store in an airtight container in the fridge for up to 10 days. For best texture, remove a brownie and allow it to sit at room temperature for 5–10 minutes before enjoying. You can also freeze them for up to 3 months in an airtight container.
