Ingredients

  • 2 Tbsp fresh raspberries (8 berries)
  • Juice of ½ lemon
  • 1 cup kombucha (plain or lightly flavoured)
  • Ice
  • Sparkling water - optional (if too tart)


Optional:

  • Honey & coarse salt for the glass rim
  • Rosemary sprig & orange slice, to garnish


Method

  1. Prepare the glass: If adding a salted rim, dip the edge of your glass in honey, then into coarse salt.
  2. Mash: Add raspberries to the bottom of the glass and lightly mash to release their juices.
  3. Add citrus & ice: Pour in lemon juice and fill the glass with ice.
  4. Top up: Pour in kombucha and stir gently to mix.
  5. Adjust taste: If too tart, top up with sparkling water.
  6. Garnish: Finish with a rosemary sprig and orange slice, if desired.
