Ingredients
- 2 cups cauliflower, finely chopped
- 2 cups broccoli, finely chopped
- 1 cup red cabbage, chopped
- 1 cup carrots, chopped
- 1½ cups fresh parsley, chopped
- 2 celery stalks, chopped
- ½ cup raw almonds, chopped
- ½ cup sunflower seeds, toasted
- Optional: ⅓ cup pomegranate seeds (Substitute for dates or cranberries)
Vinaigrette:
- 6 tbsp olive oil
- 1 lemon, juiced
- 2 tbsp fresh ginger, peeled and grated
- 2 tbsp honey
- 1 tsp sea salt
- Pepper to taste
Optional:
- Hemp seeds
- Cracked black pepper
Method
- Finely chop all vegetables by hand or pulse each ingredient in a food processor until small and uniform.
- Add all chopped salad ingredients to a large bowl.
- Whisk or shake together the vinaigrette ingredients until smooth.
- Pour over the salad, toss well, and garnish if desired.
