Carrot Cake Baked Oats

Warm, spiced baked oats with a creamy vanilla topping — comfort food that earns its place in your routine.

Ingredients

  • 1 ripe banana (approx. 100 g), mashed
  • ⅓ cup rolled oats (30 g)
  • 1 scoop PrimeSelf Vanilla Bean Whey Protein (20 g)
  • 1 small carrot (approx. 60 g), grated
  • ⅓ cup coconut milk or unsweetened almond milk  (100 ml)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Optional: Nuts

Topping:

  • 1 tbsp plain vanilla yoghurt (15 g)
  • 1 tbsp cream cheese (15 g)
  • Sprinkle of nuts

 


 

Method

  1. Preheat airfryer to 160 degrees C: Lightly grease a small oven-safe dish or ramekin.
  2. Mash banana: Add to a mixing bowl and mash until smooth.
  3. Add wet ingredients: Add milk and honey and combine.
  4. Add dry ingredients: Add oats, whey protein, grated carrot, baking powder, and cinnamon to the bowl and stir until well mixed. And nuts, if you are. 
  5. Bake: Pour mixture into the prepared dish and airfry for 15-18 minutes until the top is set and lightly golden.
  6. Make topping: Stir yoghurt and cream cheese together until smooth.
  7. Serve: Spoon topping over the warm baked oats and enjoy immediately.

Storage: Best eaten fresh. If needed, store the baked oats (without topping) in an airtight container in the fridge for up to 2 days. Reheat in the airfryer or microwave before adding the topping.
