Ingredients:
Aromatics
- 2 tbsp (30 ml) olive oil or coconut oil
- 1 large yellow onion (approx. 150 g), diced
- 1 medium leek (approx. 100 g), white and light green parts only, halved lengthwise and thinly sliced
- 3 large carrots (approx. 270 g), diced
- 3 celery stalks (approx. 120 g), chopped
Healing Spices
- 3 cloves garlic (approx. 9 g), minced
- 2 tbsp (14 g) ground turmeric
- 1 tbsp (6 g) fresh ginger, grated
- 1 tsp (2 g) ground cumin
- 1 tsp poultry or all-purpose seasoning
- 1/2 tsp black pepper
- 1 bay leaf
Liquid Base
- 6 cups (1.4 litres) low-sodium chicken broth
- 2 cups (480 ml) water
- 1 tin (400 ml) full-fat coconut milk
Protein and Fresh Add-Ins
- 700 g boneless chicken thighs or breasts (approx. 5 medium)
- 1 cup (150 g) frozen peas
- 2 cups (60 g) fresh spinach
- 2 tbsp (30 ml) fresh lemon juice
- Salt to taste

Method:
- Build the aromatic base: Heat the oil in a large soup pot over medium heat. Add the onion, leek, carrots, celery, and a pinch of salt. Cook for 12 to 15 minutes, stirring occasionally, until softened and lightly caramelised.
- Toast the healing spices: Add the garlic, ginger, turmeric, cumin, poultry seasoning, and black pepper. Stir constantly for 1 to 2 minutes until fragrant.
- Add the liquid and chicken: Pour in the chicken broth, water, and coconut milk. Add the chicken and bay leaf. Bring to a gentle simmer, ensuring the chicken is fully submerged.
- Simmer until tender: Partially cover the pot and simmer for 35 to 45 minutes (25 to 30 minutes for boneless chicken) until the chicken is fully cooked and tender. Avoid vigorous boiling to keep the coconut milk smooth.
- Shred the chicken: Remove the chicken from the pot and allow it to cool slightly. Shred or chop the meat into bite-sized pieces and return it to the pot.
- Add the fresh ingredients: Stir in the frozen peas, fresh spinach, and lemon juice. Simmer for a further 5 minutes until the spinach wilts and the peas are heated through. Taste and adjust seasoning.
- Garnish and serve: Remove the bay leaf. Ladle into bowls and garnish generously with fresh coriander or parsley. Serve warm.
Storage: Allow to cool completely and refrigerate in an airtight container for up to 4 days. Freeze in portions for up to 3 months. Reheat on the stovetop over low heat, adding a splash of broth or water to loosen if needed.
