A creamy, citrus-forward no-bake cheesecake made straight in the tub or one bowl. High in protein, lightly sweet, and effortlessly satisfying for breakfast, dessert or a snack.

Ingredients
- 1 tub (±250 g) Greek yoghurt OR low-fat smooth cottage cheese
- 1 scoop PrimeSelf Vanilla Whey Protein
- Zest of ½ lemon
- 1–2 teaspoons fresh lemon juice
If using cottage cheese:
- 1 teaspoon honey
Biscuit:
- 3 Tennis biscuits, broken in half
Method
- Mix: Add the protein powder directly into the tub of Greek yoghurt or smooth cottage cheese and stir until completely smooth and lump-free.
- Flavour: Add lemon zest, lemon juice and honey (if using cottage cheese), then mix again until creamy and well balanced.
- Assemble: Push the broken biscuits down into the mixture, pressing lightly so they are partially submerged.
- Chill: Seal the tub and refrigerate overnight (±8 hours) to allow the cheesecake to firm up and flavours to develop.
