Superfood Dark Choc Nutty Squares
Crispy, nutty and naturally sweet with bursts of juicy raisins, these oven-baked squares are packed with fibre-rich seeds and healthy fats to support a happy, balanced gut — with a satisfying crunch in every bite.

Ingredients
- 1 ½ ****cups rolled oats (use certified gluten-free if required)
- 2 tablespoons linseed flour
- ½ cup almonds, finely chopped
- ½ cup walnuts, chopped
- ⅓ cup pumpkin seeds (pepitas)
- ⅓ cup sunflower seeds
- 2 tbsp chia seeds
- 2 tbsp ground flax seeds
- ½ cup raisins or cranberries
- ¼ cup creamy almond butter or peanut butter (no sugar added)

½ cup date syrup
- 6–8 large Medjool dates (pitted
- ⅓ cup boiling water
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2 tablespoons of hot water if it’s too dry
- ½ tsp ground cinnamon
- ¼ tsp sea salt
For the topping
- ½ cup dark chocolate / chips
- 2 Tablespoons coconut oil
Optional:

Method
- Preheat the oven to 170°C (fan 160°C). Line a baking tray with parchment paper.
- Make the date syrup: Place the dates in a bowl and pour over 1/2 cup boiling water. Let soak for 10-15 min (Until very soft). Blend the water and soaked dates together until smooth.
- In a large mixing bowl, combine the oats, linseed flour, chopped almonds, walnuts, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, raisins, cinnamon and sea salt. Stir well. If using Super Greens, stir it into the dry mixture.
- In a separate bowl, mix the almond butter, date syrup, melted coconut oil, vanilla and boiling water, if using, until smooth.
- Pour the wet mixture into the dry ingredients and mix thoroughly until everything is evenly coated. The mixture should be thick and slightly sticky.
- Pour the mixture onto the tray and press down with the back of your spoon into a rectangle.

Important for crunch:
Press the mixture down firmly with the back of a spoon (or your fingers) until about 0.5–1 cm thick. The thinner they are, the crunchier they’ll become. - Bake for 15–18 minutes, or until golden brown.
- Remove from the oven and allow to cool completely on the tray. They will firm up and crisp as they cool.
- Melt the dark chocolate and coconut oil, stir to combine and then drizzle over the bark and ensure it covers all edges. Place in the freezer for 15 minutes until the chocolate has hardened.
For extra crunch: once baked, turn the oven off and leave the bark inside with the door slightly ajar for 5–10 minutes to dry out further.
Storage
Store in an airtight container in the fridge for up to 14 days.
You can also freeze them for up to 3 months.
